Husker Saturday…

Saturday was the day that Galen looks forward to ALL year!  I would love to say that it was our anniversary but it is actually the first day of The University of Nebraska football season. ;-)  We started off the day by going to the park…the kids rode their bikes…Galen and I did a little running…and then we went to Krispy Kreme.  Ha ha…that is so us…burn some calories so we can enjoy some calories. :)  Then we came home and everyone put on their Husker red and got ready to watch the game.  The game was on for less than 5 mins when Galen started yelling at the TV.  Tucker looked at him and said, “Dad, your freaking me out.”  Ha ha…get used to it Tuck.  The season has only just begun.

Of course a football game is not a football game without some yummy food.  We had BBQ beef sandwiches, beans, chips, fruit, and fruit dip.  The fruit dip is a recipe that Lauren gave me and it is SO good.  It is the best fruit dip I have ever had.  Since it is just the beginning of football season I thought I would share the recipe.  I think it would be a great addition to any game day spread… :-)

Easy Fruit Dip

8oz of cream cheese

1/2 cup brown sugar

1 1/2 tsp vanilla

1/2 tsp almond extract

1 jar marshmallow cream

Mix all ingredients together and serve with fresh fruit. :)

It was a great first weekend of college football.  Galen’s alma mater Baylor pulled out an amazing win on Friday night and then the Huskers won on Saturday.  Happy husband…happy me.  :)
